Ortega will be cooking up some tasty, homemade recipes that are affordable during these hard economic times.
Here's the recipe's for those who wish to try them at home:
Arroz con Pollo, Rice and Chicken
1 Rotisserie Chicken
1 1/2 cups of rice
1 Onion
2 Tbs. mustard
4 Tbs. Worcershire sauce
1/4 cup Ketchup
1 12oz. package of Mixed Frozen Vegetables
1 can of Chicken Broth Fat Free
Olive or Canola Oil
Salt and Pepper
Diced Green Olives (optional)
We are going to use the White Meat from the chicken. Separate and shred entire chicken, reserving the rest of the meat for another recipe. Cook the rice like you would regular rice but instead of just water use 1/2 can of chicken broth. Dice the onion and sauté it in the oil, ad the chicken, ketchup, Worcershire, mustard, frozen vegetables and some of the chicken broth. Add the rice and mix until all the flavors blend. Serve with a side salad and bread.
Chicken Quesadillas
Rotisserie Chicken
Flour Tortillas
Three Mexican Shredded Cheese
1 small can of Salsa Casera (Herdez)
Jalapenos (optional)
1 Onion. Canola Oil
Use the rest of the chicken left from the Rotisserie Chicken. Slice the onion and sauté in Canola Oil until tender, ad, the chicken and the salsa and let it simmer until it becomes thick. Heat the tortillas on one side, turn and place a small amount of cheese, then the chicken, top with some more cheese and jalapenos if you like and cook until the cheese melts. Serve with refried beans, avocado slices or a salad.
