Chef Jen Van Fleet of Vino & Friends visited the Great Day Kitchen to prepare Braised Baby Artichokes in honor of the Castroville Artichoke Food & Wine Festival this weekend in Monterey County.
Vino & Friends will be serving this dish at their restaurant this weekend too.
1 dozen Baby Artichokes 1 Lemon, zested and Juice 1 Tbls Thyme 1 Tbls Garlic, minced 1/2 Roasted Red Bell Pepper 1 Tbls Capers 1/2 Red Onion, small diced Pinch of Red Pepper Flakes 1/2 bunch Parsley, rough chop 1/2 cup Olive Oil 1/2 cup Dry White Wine
In sauce pot heat oil. Add remaining ingredients except the wine. Saute for 3-5 min. Add wine and cover. Place in 350 degree oven for 10-15 min, or until fork tender.
