Clayton Takes A Bite Out Of The Stone Fruit Jubilee

This weekend, you can savor the flavor of the wonderful world of stone fruits.

Great Day's Clayton Clark was at MOA Oasis Garden in Clovis Friday morning learning all about the Stone Fruit Jubilee.

The event will take place Saturday, June 23, from 5 p.m. to 8:30 p.m. at MOA Oasis Garden -- 5790 N. Indianola Avenue. Admission is $5 for adults, and kids 12 and under get in free.


Stone Fruit Parfait Recipe

-- 2 cups ground almonds
-- 1 cup ground coconut flakes
-- 3/4 cup cacao
-- 1 1/2 cups coconut palm sugar or organic cane sugar
-- 2 tsp. cinnamon
-- 1/2 tsp. nutmeg

Combine all ingredients to make your parfait batter.

Select up to five different stone fruits (e.g. apriums, apricots, plums, pluots, nectarines, peaches) peel and thinly slice.

In a glass or bowl, layer:

-- 1/3 cup of fruit
-- 1/4 cup of parfait
-- 1/3 cup of fruit
-- 1/4 cup of parfait
-- 1/3 cup of fruit

Use different colors of fruit as you layer for optimal eye appeal.
